Buttermilk Pancakes

Homemade pancake is simple and delicious.  A few years back,  I was introduced to buttermilk pancake.  After tasting my first bite of buttermilk pancake, I immediately noticed the rich flavor that lacked in a regular pancake, and I was hooked.  I could not go back to making ‘regular’ pancake, especially using the pre-mix pancake packages.

In my search for a buttermilk pancake recipe, I wanted to find a recipe that explained the (culinary) ‘art’ of what makes buttermilk pancake taste more flavor than regular pancake.   It was important for me (the biochemist in me) to understand how the buttermilk  interacts with the other ingredients, and what gives the little round cakes the light fluffy texture and flavorful taste.  I scoured the web to find a recipe and to my delight I stumbled onto ‘Buttermilk Pancakes:  It’s easy to make the ultimate pancake’. In this blog, the author breaks the recipe from the basic recipe, cooking, eating, making them fun (adding more ingredients), going for perfection (tips on taking the pancakes to the next level), to when disaster strikes (say you are out of an ingredient – don’t panic).

I experimented with the original recipe and came up with my version (that I have shared with others who tasted and loved my homemade buttermilk pancakes):

The ‘Wet’ ingredients

  • 1 cups buttermilk
  • 1 egg
  • 2 Tablespoons melted butter – use microwave
  • 2 Teaspoons Vanilla

The ‘Dry’ ingredients

  • 1 cup flour
  • 1 Tbsp sugar
  • 1/2 tsp baking soda (make sure it’s not 3 years old…)
  • 1/2 tsp baking powder
  • 1/2 tsp salt

Take the egg and buttermilk out of the refrigerator and let them come to room temperature.  Proceed with the following instructions from the original recipe:

  • Put the wet and dry ingredients into separate bowls.  Whisk each one lightly.  Add roughly half of the dry mix into the wet and whisk smooth, not too long. Add the remainder of the dry mix and barely whisk together. Make sure all of the flour is mixed in. You don’t want to beat this too much as it strengthens the gluten in the flour and makes the pancakes tougher. Don’t worry, you can’t screw this up; just don’t put it in an electric mixer and let it run forever…
  • If possible, let the batter rest for a few minutes to allow the baking soda and baking powder to perform their magic. This will make for airier pancakes.
  • NOTE:The batter should be fairly thick, not runny. The perfect batter should pour onto the fry pan and not move much; it should only require a few taps of the measuring cup to spread it out.  A few readers have commented that they get runny batters and this is most likely due to thin buttermilk.  If this happens don’t worry, just add a bit more flour, a few tablespoons at a time until it thickens up. Don’t be afraid to add flour to thicken up the batter!
  • A simple non-stick fry pan is all you need. Heavier is better as it spreads the heat, prevents burning, and browns the pancakes nicely. Heat the pan on the lowest setting on your stove top as it is easy to burn pancakes. If you have an electric skillet, set it to 325°F.

As a mother to busy boys, I do not always have the time to make those perfect buttermilk pancakes every morning.  Instead, I make a few batch and then freeze them. To prevent the stacks of pancakes from sticking together in the freezer, I use parchment paper to separate each pancake.  Simply store the stacks of pancakes in a Ziploc freezer bag.

For those mornings where I am challenged with time, I simply take the individual round cakes and put them in the toaster.  In less than 5 mins., buttermilk pancakes are served. No complaints from anyone as the pancakes taste just as fresh.

My boys love home-made buttermilk pancakes.  To make these tasty little cakes light and fluffy, the recipe calls for some ingredients, like the buttermilk, to be at room temperature – which can eat up a lot of prep time.  I enjoy my lazy Sunday (or any) mornings and want to enjoy my ‘cake’ too.  I’ve found that making a batch load of buttermilk pancakes and freezing them is the way to go.  On any mornings, I just take the frozen buttermilk pancakes and pop them in my toaster.   In less than 5 minutes they are ready for my boys – and just as good.  Morning pancakes!
